Adv. Itamar Cohen is a partner in the Hi-Tech and Venture Capital Department at Amit, Pollak, Matalon, specializing in privacy protection, technology and cyber regulation, and leading compliance processes in these fields. Itamar also advises clients on the regulatory and operational aspects of implementing AI and GenAI systems, with a focus on privacy, information security, and risk management. He has extensive experience advising and representing both local and international companies in all areas of commercial law, focusing on high-tech, commercial agreements, and internal compliance and enforcement processes in the fields of privacy and data security.

Itamar specializes in various privacy, data protection and cybersecurity regulations, including the Israeli Protection of Privacy Law and the Information Security Regulations promulgated thereunder, the European GDPR, the California CCPA, and HIPAA regulations applicable to medical and insurance entities in the United States. He provides ongoing counsel to companies and organizations, both through continuous advisory services and comprehensive compliance projects, including guidance on the use of advanced technologies such as cloud and SaaS solutions, privacy-oriented architecture, and AI and data projects. Additionally, Itamar advises organizations in audit procedures מול the Israeli Privacy Protection Authority (PPA), supporting them throughout the process and its findings.
